Ridiculously Good Whole Wheat Bread


Farmer's Whole Wheat Bread Recipe

For 80% Whole Wheat

3-1/2 cups warm water
2 Tbsp. yeast
4 cups whole wheat flour
1/4 cup oil
1/2 cup honey
1-1/2 Tbsp salt
1/3 cup gluten flour
1-1/2 bread flour
3-1/2 cup whole wheat flour

Directions:

1.  In a large bowl, combine water, yeast, and wheat flour.  Let sit five minutes until bubbly.   Add oil, honey, salt, gluten flour, and bread flour.

2.  Add whole wheat flour.  Stir as much as you can and then being kneading in bowl. Once most of the flour is incorporated, transfer dough to counter and knead until fairly smooth.  Clean bowl, spray with Pam, and return dough to bowl.  Turn once to coat dough.  Cover and let rise until doubled.  (I rise on top of a heating pad on medium or high.)

3.  Punch down and divide dough into thirds.  Knead each and form into loaves; place in greased bread pans.  Let raise until doubled.  Bake for 24-27 minutes at 375 degrees.  Makes three loaves.

Note:  This recipe may be doubled.  If your whole wheat flour is warm from being freshly ground, the water you start with should be cold.

65% Whole Wheat
3-12 c. warm water
2 T. yeast
4 c. whole wheat flour
1/4 c. oil
1/2 c. honey
1-1/2 T. salt
1/3 c. gluten flour
3-1/4 c. bread flour
1-3/4 c. whole wheat flour

50% Whole Wheat
3-12 c. warm water
2 T. yeast
3 c. whole wheat flour
1/4 c. oil
1/2 c. honey
1-1/2 T. salt
1/3 c. gluten flour
4-1/2 c. bread flour
1-1/2 c. whole wheat flour

  1. This looks really yummy! We live on our homemade wheat bread. You get spoiled sometimes and it is really hard to find good store bread for us now.

  2. I haven't made bread for a while and now I am dreaming of hot whole wheat bread out of the oven with butter and honey on it. Nothing is better than that except maybe chocolate.

  6. Yes a bread recipe that doesn't use dry milk powder. I am so trying this.
    My Family laugh at my past bread attempts and know it just isnt my talent. I make great Bricks! LOL
    I will have to try this one and hope it works out

  9. In Canada we don't need to add the gluten, I have switched back to Canadian flour here, because my bread was having issues...

    My recipe is similar except no gluten, you can buy a cheap coffee grinder or probably use a wheat grinder and add ground stuff, just throw it in. Hemp hearts, fennel, pumpkin seeds, it adds so much nutrition easily.

    And for the brick bread makers, if you do make a brick grind it up and freeze it for any time you need bread crumbs... I used to have a year supply!
